Creamy Parsley Lemon Dressing

Ingredients
  

  • 6 tablespoons light sour cream
  • 5 tablespoons olive oil
  • 1/2 cup fresh parsley, minced
  • 1/4 teaspoon dry mustard
  • 3 tablespoons lemon juice (about 1 lemon)
  • 2 teaspoons minced garlic
  • salt and pepper to taste
  • 1/2 teaspoon lemon zest optional

Instructions
 

  • In a small bowl whisk dressing ingredients together well.
  • Serve with your favorite salad.

Notes

If making ahead of time, mix the dressing into the salad immediately before serving. Dressing can be refrigerated for up to 5 days.
Ā Once you put in the refrigerator, this dressing will thicken, which I prefer, but if you'd rather it be thinner, you can add a bit or water or olive oil to it immediately before serving.
