Leftover Turkey and Bean Soup

Ingredients
  

  • 2 tablespoons olive oil
  • 3 teaspoons minced garlic
  • 1 onion, chopped
  • 2 carrots, chopped
  • 3 celery stalks, chopped
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon poultry seasoning
  • 1 bay leaf
  • black pepper and salt to taste
  • 1 (15 ounce) can black beans
  • 1 (15 ounce) can great northern beans
  • 1 (15 ounce) can dark kidney beans
  • 4 cups chicken broth
  • 2 cups cooked turkey, chopped

Instructions
 

  • Heat olive oil over medium heat in a dutch oven or large pot. Add minced garlic, onion, carrots and celery. SautĂ© until vegetables are tender.
  • Add seasonings.
  • Add chicken broth and turkey to pot and simmer for about 10-15 minutes.
