Cheesy Beef and Bean Dip

Ingredients

extra lean ground beef
1
medium onion, chopped
1
tablespoon
olive oil
3
tablespoons
taco seasoning
or 1 packet

ounces
neufchatel cheese, softened
1
(16-ounce) can
refried beans
2
(4-ounce) can
mild green chilies, chopped
1
(14.5-ounce) can
diced tomatoes, drained
3
cups
shredded Mexican-blend cheese, divided

fresh cliantro
tortilla chips
Instructions
Preheat oven to 350°F.
Over medium heat, add olive oil, onions and beef to a 12-inch cast iron skillet. Cook until beef is browned and onions are tender.
In a bowl combine softened Neufchatel cheese and taco seasoning. Mix until well blended.
Add cream cheese mixture, refried beans, green chilies, tomatoes and 2 cups of cheese to skillet and stir to combine. Cook until cheese is melted.
Top skillet with remaining 1 cup of cheese, add skillet to oven and cook for 25 minutes or until cheese is melted.
Top with cilantro.
Serve immediately with tortilla chips for dipping.
