Pineapple Coleslaw

This simple Pineapple Coleslaw is a nutritious side dish that can be added to burgers, pulled pork, or just about any meal.

We can pretend that it’s not going to be in the 40’s and 50’s soon here in Michigan, right?

I’m going to hold onto our 70 degree days as long as possible.  And Hawaiian-style foods make me think of tropical weather, which I will be dreaming of all winter long.

 Okay, not exactly.

f I get the chance to do one of my ALL-TIME favorite activities this winter (SKI!!) I won’t be dreaming of the tropics every day…just every day I’m not skiing.

And if you’re wondering, slopes is part of my blog name for my love of skiing!

But don’t worry I haven’t forgotten about fall, it’s one of my favorite seasons except for the fact that it immediately precedes winter.

So last week I posted a delicious and super simple Slow Cooker Hawaiian Barbecue Pulled Pork recipe.

That’s when I came up with the idea to pair it with this pineapple coleslaw that is just as simple to make as the pulled pork. A whopping 5 minutes to prep!

Dietitian’s Dish

Green cabbage is a very low-calorie vegetable with only about 20 calories per cup and includes 8 vitamins and minerals.

You only need a 1/2 cup of cabbage to provide 45% of the daily recommended amount of vitamin C. This is an excellent antioxidant that also helps strengthen skin and heal wounds.

Green cabbage is also an excellent source of vitamin B6 which plays an important role in the cardiovascular, digestive, immune, muscular and nervous system functions of the body.

Pairings With This Pineapple Coleslaw

Trust me, this pineapple coleslaw pairs awesome with my Slow Cooker Hawaiian Barbecue Pulled Pork.

My husband enjoyed the coleslaw on his sandwich while I loved it on the side.

Pineapple Coleslaw

A sweet Hawaiian-style coleslaw.
Prep Time 1 hour 5 minutes
Total Time 1 hour 5 minutes

Ingredients
  

  • 3 tablespoons plain yogurt
  • 2 teaspoons rice vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 2 tablespoons pineapple juice
  • 4 cup shredded green cabbage
  • 1/4 cup green onions chopped
  • 2 tablespoons fresh cilantro chopped
  • 1 cup pineapple tidbits
  • salt and pepper

Instructions
 

  • In a bowl whisk together yogurt, rice vinegar, lime juice, brown sugar and pineapple juice.
  • Add cabbage, green onions, cilantro and pineapple to dressing. Mix until combined.
  • Add salt and pepper to taste.
  • Refrigerate for about 1 hour before serving.

Notes

If you buy pineapple tidbits in 100% pineapple juice you can use the juice from the tidbits for the 2 tablespoons that is needed in the recipe.
