These Mexican Beef Taco Cups are a fun and healthy alternative to regular tacos and just as simple!

I’ve mentioned this numerous times but getting your kids in the kitchen (even though everything takes longer) is a fantastic way to get your kids to actually eat the food you are cooking and they are helping cook!

My kids LOVED helping with this recipe since they could add their own amount of toppings and were so pleased to eat their own personal cups.

Time permitting I try to allow at least my older two kids (3 and 5-year-olds) to help out in the kitchen, and of course, little E can’t help himself but also try to help out.

Here’s an idea of how it looks (making a different recipe when they were a little younger) when they all help out – it’s quite amusing.

My focus this year is simple, simple, simple. Yes, I’m typically focusing on healthy foods, but now I’m trying to also focus on how to make foods simple. I believe this recipe fits both criteria. 

These taco cups also turned out much better than I anticipated when I first thought to make them.

I was especially suspicious that the tortilla “cups” would not be crispy, but they turned out great! My kids (and of course Mexican food lover husband) loved them!

I often discuss how beef can fit into a healthy diet, especially extra lean or lean ground beef which you’ll often see on Chocolate Slopes. But I also understand that the price of beef can an issue.

Well, believe me, it could be expensive (like anything) if you don’t pay attention.

Check out this awesome guide on 6 Ways to Save on Beef. Suggestions like buying larger cuts or quantities of beef can save a ton. When it comes to buying lean or extra lean ground beef I will always stock up when the price is reduced because the “sell-by” date is that day or the following.

Then I will typically cook one pound that day and freeze the rest. Simple as that!

Mexican Beef Taco Cups

A fun & simple alternative to regular beef tacos!
Prep Time 15 minutes
Cook Time 22 minutes
Total Time 37 minutes

Ingredients
  

  • 4 whole wheat tortillas
  • 1 pound lean or extra lean ground beef
  • 3 tablespoons taco seasoning
  • 1/2 cup salsa
  • 1/2 cup sliced black olives
  • 1/2 cup Mexican-blend cheese, shredded
  • sour cream optional

Instructions
 

  • Preheat oven to 350°F. Cut approximately 4 inch circles out of each tortilla and place each circle into a muffin pan.
  • Bake tortillas for 12 minutes.
  • While tortillas are baking, add beef to large skillet over medium heat.
  • Stir in taco seasoning and heat until beef is thoroughly browned.
  • Leaving tortilla cups in the muffin pan add beef evenly to each cup followed by salsa, olives and cheese.
  • Bake for another 5-10 minutes or until cheese is melted.
  • Top with sour cream immediately before serving.
