Healthy Weekly Meal Plan {Week Nine}

This weekly meal plan (week nine) includes several quick meals that are great for any busy family that is short on time throughout the week!

This week’s meal plan was from early in February, right after returning from a ski trip. And boy was it a crazy busy week. We had an awesome long weekend up north skiing but it made for a hectic week since I had no time to grocery shop. I’m actually surprised I didn’t order carry out half the week. Anyway, you’ll see that although I didn’t order out, I didn’t spend much time cooking. 

Thankfully I stocked up on freezer breakfast and dinner options before we left on our trip. Otherwise we would have been eating more sandwiches and breakfast for dinner – which is also fine too!

Monday (30 minutes)

  • Chicken Fettuccine Alfredo: one of my favorite simple meals. Just whole wheat linguine, 1 jar Ragú Light Parmesan Alfredo Pasta Sauce and cooked chicken.
  • Roasted Broccoli

Tuesday (10 minutes)

white chicken chili

  • Leftover White Chicken Chili: I made a double batch of this chili before we left for our weekend ski trip and thankfully we had enough left over to enjoy this week.
  • Leftover Roasted Broccoli from last night.

Wednesday (30 minutes)

  • Frozen Panko Crusted Cod, Parmesan Crusted Tilapia: my favorite go-to meal. I always keep frozen fish from Sam’s Club on hand for crazy days or weeks like this one!
  • Roasted Asian Vegetables: cooked just like my roasted broccoli recipe. 
  • Sweet Potato Friesbaked sweet potato fries

Thursday (20 minutes)

Friday (10 minutes)

Saturday 

  • Celebrated our daughter’s birthday with family tonight. Her request was boxed mac and cheese so that’s what she got! The rest of us enjoyed Jersey Mike’s Subs, one of my favorite sub places!

Sunday

  • The second half of my daughter’s birthday celebration was to go to the Sea Life Aquarium near our house and enjoy Red Robin for dinner (one of our daughter’s favorite restaurants). Yay for no cooking this weekend for me!

Breakfast this week

simple homemade granola with flaxseed

  • Homemade granola with yogurt
  • Peanut Butter and Honey Oatmeal:I actually made this in the evening mid-week since I don’t give myself an extra 20 minutes in the morning to make the oatmeal.
  • Frozen Whole Grain Eggo Waffles
  • Frozen Jimmy Dean Turkey Sausage/Egg/Cheese Muffins: these taste surprisingly so good, and are great to grab and go for me during the busy mornings.

Lunch this week

  • peanut butter/jelly and almond butter/jelly on whole wheat bread
  • yogurt
  • cheese sticks
  • cherry tomatoes
  • sliced apples, mandarin orange cups, cantaloupe, honey dew

Snacks this week

  • granola bars: Nature Valley, Bevitas
  • pretzels and hummus
  • Always fruit!
