I continue to be obsessed with grilling ever since I purchased a new grill a few weeks ago. And recently, Side Delights sent me a large assortment of various potatoes including russet, fingerlings and red potatoes. Each type is perfect for grilling! And with all the 90-degree days we are experiencing lately in Michigan, we are practically living in the lake in our backyard.

So as you can guess, I’m not a big fan of spending a lot of time in the kitchen when it’s gorgeous outside. What better way to save time than to grill simple recipes like these Grilled Mediterranean Potato Wedges?

And since summer began, I have been serving very simple foods for lunch and dinner. However, this has become a slight issue since my kids are less and less likely to try new foods now.

Well as a registered dietitian I’m working on changing this ASAP. So it was perfect timing to receive these potatoes in the mail since the possibilities are endless when it comes to trying new recipes. The recipe I’m bringing you today is actually from the Side Delights website. Check out their website for side dishes, main entrees, breakfast ideas and more!

I’ve talked quite a bit about Michigan agriculture in the past and love the chance to discuss my amazing agricultural state whenever possible.

Michigan produces more than 300 agricultural products a year and ranks seventh in the nation for the number of sales of potatoes. I’m happy to say that Side Delights potatoes are actually grown on a farm in southeast Michigan.

Grilled Mediterranean Potato Wedges

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients
  

Lemon-Garlic Drizzle

  • 1 large garlic clove minced
  • 1 teaspoon coarse kosher or sea salt
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons olive oil

Grilled Potatoes

  • 2 lbs. small russet potatoes I used Side Delights Steamables Russet Potatoes, rinsed and patted dry, each cut into 4 wedges
  • Olive oil for brushing
  • Salt and pepper
  • ½ cup pitted Kalamata olives finely chopped
  • 2 tablespoons snipped Italian parsley
  • 4 ounces feta cheese crumbled

Instructions
 

  • To make the Lemon-Garlic Drizzle, combine the minced garlic, salt, lemon juice, and olive oil in a bowl. Whisk together then set aside.
  • Arrange wedges on a grill pan. Brush with olive oil and season with salt and pepper.
  • Prepare a medium-hot fire in your grill. Transfer the grill pan to the grill rack (or place potatoes directly on grill. Close the grill lid. After 3 to 4 minutes, open the lid and turn the potatoes. Close the lid again and repeat the process for 12 to 15 minutes or until potatoes are tender when pierced with a fork.
  • To serve, transfer the potatoes to a platter. Drizzle with the lemon-garlic drizzle and sprinkle with feta, Kalamata olives, and Italian parsley.
