With the holidays approaching you can’t go wrong with this simple and nutritious Cheesy Carnitas Casserole recipe that is made with conveniently pre-seasoned Smithfield Boneless Pork Shoulder Seasoned Carnitas!

Now that we’re into November, the holidays are quickly approaching, which means life gets even busier. Not that we aren’t busy enough with after-school activities, homework, etc. but now parties are being scheduled and gift buying is top of mind, in addition to the usual day to day operations of a working wife and mother. This, of course, leads me to focus on simple, nutritious meals to try and avoid resorting to less than healthy and much more costly carryout options.  

I recently discovered Smithfield Marinated Fresh Pork, which is a wonderfully convenient protein that comes already pre-seasoned (aka less work in the kitchen!) with no artificial ingredients. I used the Smithfield Seasoned Carnitas which is made from 100% all-natural boneless pork shoulder and conveniently pre-seasoned in a two-pound package, making it perfect for a family dinner. And since my family loves Mexican-inspired dishes, I decided to make this Cheesy Pork Carnitas Casserole with only six simple ingredients.

Smithfield Boneless Pork Shoulder Seasoned Carnitas can easily be prepared in the slow cooker (like I did for this recipe) or simply roasted in the oven. For this recipe, I put the pork carnitas in my slow cooker, along with 1/2 cup water, before leaving for work. Then once returning home, all I needed to do was shred the pork, combine all the ingredients, and cook in the oven for a total of 25 minutes.

And not only does this recipe make the perfect weeknight meal, but it would also be great to serve as an appetizer for tailgating or a holiday party. When having friends and family over around the holidays, this could easily be served with tortilla chips or even soft tortillas.

Ingredients

  • 2 pounds Smithfield Seasoned Carnitas
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (4 ounce) can green chilies
  • 1/2 cup sour cream
  • 1 1/2 cups shredded Mexican cheese
  • 1/4 cup black olives, sliced
  • Cilantro (if desired)

Instructions

  1. Add Smithfield Seasoned Carnitas to slow cooker, add water, and cook for 3-4 hours on high or 6-8 hours on low.
  2. Shred pork carnitas with forks and mix with juices.
  3. Preheat oven to 350°F.
  4. In a 2 quart casserole dish sprayed with non-stick cooking spray, combine shredded pork carnitas, black beans, green chilies, sour cream and 1 cup of Mexican cheese.
  5. Bake for 20 minutes, top with remaining cheese and cook for another 5 minutes.
  6. Remove from oven; top with black olives and cilantro, and serve.
