These roasted carrots are such a simple way to add more nutritious and lower calorie food to your holiday season.
Christmas is THIS week! It always seems to sneak up on me and I’m sure I’m not alone. We also have three December birthdays in our family before Christmas arrives (my youngest son E, my mother-in-law and my own). Quite a busy time of year to say the least!
That’s one reason I like to cook simple recipes like these roasted carrots. I had leftover fresh herbs from my Thanksgiving turkey and thought they would be perfect to add to these carrots. And don’t worry if you don’t have fresh herbs, you can easily use dried. The basic substitution is 1 tablespoon of fresh herbs equals about 1 teaspoon dried herbs (a ratio of 1 to 3).
Carrots are an excellent source of vitamin A (plays a role in immunity and eye health) and a good source of vitamin C (helps heal wounds). Carrots are also very low in calorie with one medium carrot having only 25 calories. Talk about a healthy snack or side dish! Of course we eat carrots like crazy in our house whether they are raw, roasted or added to casserole dishes. My kids favorite way to eat them is definitely raw carrots dipped in hummus.
