Peanut Butter and Chocolate Granola Bars

These Peanut Butter and Chocolate Granola Bars are a perfect snack for kids and adults alike and are filled with simple yet nutritious ingredients.

Pre-packaged snacks are probably the best idea ever – for both the food companies AND anyone with limited time. Which is pretty much most people these days, right?  

Well, I would love to just buy pre-packaged foods and be done with it.  They are great to grab-and-go. This is especially true when I already need to corral three children, in the winter, in and out of the car, along with needing to help at least two out of three of them with socks, shoes, jackets, hats, etc.  

You get my drift.  

Of course some pre-packaged snacks can be excellent snack choices, some of which I mentioned in my post Quick Snacks for the Busy Professional.  But, I also don’t always want to spend extra money on healthier options yet I still want to feed my family healthy snacks.  

Thus, the desire to start experimenting with homemade granola bars.  And I had to started with my two favorite loves (chocolate + peanut butter).

Let’s be real, you really can’t go wrong with this combination.

I also love that I can add things like flaxseed. This not only adds a nutritional kick but also provides a great nutty flavor on top of the peanut butter.  You can always add other ingredients such as crispy rice cereal or other nuts to the mix. Just be sure to add a bit more peanut butter or honey to maintain the proper stickiness. 

Also, I keep mine in the freezer until we’re ready to eat them. If you leave them in the fridge or at room temperature, they fall apart quite a bit.

And don’t worry, they don’t get too hard in the freezer.

Peanut Butter and Chocolate Granola Bars

A simple sweet treat that you’ll feel good about giving your family!
Prep Time 1 hour 10 minutes
Total Time 1 hour 10 minutes
Servings 12

Ingredients
  

  • 2 cups old fashioned oats
  • 1/2 cup flaxseed
  • 1/4 cup sunflower seeds
  • 3/4 cup peanut butter crunchy
  • 1/3 cup honey
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions
 

  • Mix oats, flaxseed and sunflower seeds together in a large bowl.
  • Add peanut butter, honey, vanilla extract and chocolate chips to bowl.
  • Stir well until all ingredients are combined.
  • Place mixture in an 8 x 8 baking pan.
  • Cover and place in freezer for about 1 hour before serving.
  • Keep bars in freezer to maintain their shape.
