Mini Vegetable Quiche Phyllo Cups

These Mini Vegetable Quiche Phyllo Cups are stuffed with vegetables, eggs and topped with Gruyère cheese. It’s the perfect appetizer for brunch or special weekend breakfast!

My youngest son who’s almost 2 1/2 absolutely LOVES eggs, either over easy or scrambled.

My husband was making eggs several months ago and E had the chance to help. So now whenever he sees my husband in the kitchen he screams “EEEEGGGGGGSSSSSS!!!!!!” because what else could daddy possibly be making besides eggs?!? 

Over the past few months, I have been swamped with work and just life in general.

This leads to me not planning for dinners as much I would like. But thankfully there are a few go-to dinners that I make that keep everyone happy.

Besides the basic grilled cheese and raw veggies dinner, my latest simple dinner is to scramble up some eggs and serve them with turkey sausage and pre-made pancakes.

This is not only a nutritious meal but it’s also ready in about 10 minutes. And this obviously pleases both mom and kids.

We’ve talked about protein and dairy quite a bit but what about other important nutrients found in dairy products?

Calcium is one of the most important minerals that our bodies need to function properly. And it’s one of the several nutrients found in dairy products.

Calcium needs vary depending on your age and gender.

However, you can easily meet your calcium needs by eating dairy at every meal and as part of at least one snack throughout the day.

Benefits of Calcium:

  • Keeping your bones and teeth strong
  • Helps with muscle contraction
  • Aids in blood clotting
  • Helps in releasing of hormones
  • Helps in keeping a normal heart beat

As you can see there are a plethora of important reasons to eat dairy regularly.

Surprisingly these mini quiche cups are excellent even three days after making them.

I reheated them twice and they still tasted just as good as when I first baked them.

I did however reheat them in the oven to give them the crispy texture once again and they were perfect.

Mini Vegetable Quiche Phyllo Cups

A simple brunch appetizer filled with eggs, cheese and veggies!
Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes

Ingredients
  

  • 1 tablespoon olive oil
  • 1/2 cup red peppers diced
  • 1/2 cup sweet onions diced
  • 1/4 cup fresh spinach chopped
  • 1 tablespoon fresh parsley chopped
  • 1/2 teaspoon minced garlic
  • 2 eggs
  • 1 tablespoon skim milk
  • 1 cup Gruyère cheese
  • 24 mini phyllo cups

Instructions
 

  • Preheat oven to 350°F.
  • In a skillet over medium heat add olive oil, minced garlic, red peppers and onions. Cook until vegetables are tender then add spinach and parsley, heat for a few minutes.
  • In a bowl whisk together eggs and milk.
  • Add vegetable mixture to eggs.
  • Place phyllo cups on a cookie sheet and add egg vegetable mixture to each cup.
  • Sprinkle each cup with Gruyère cheese.
  • Bake for 10 minutes or until eggs are set.

Where did you find the mini phylo cups?

I found them in the freezer section of my local grocery store.
