Creamy Broccoli Salad

I am so excited for summer this year.  I no longer have an infant that needs to be held/bounced/rocked all summer long.  I have 3 very active young children who LOVE water and sunshine.  I can turn the sprinkler on and the kids just have an absolute blast!  So obviously I don’t prefer to be in the kitchen all day long, especially on gorgeous summer days (this is besides the fact that I couldn’t possibly spend all day in the kitchen even if I wanted to with a 1, 3 and 4 year old).  This is why I make salads like this broccoli salad since it’s not only healthy, but it’s also quick to make!

Creamy Broccoli Salad

I love to make all types of salads, especially in the summer.  I make some variation of broccoli salad quite frequently in the summer with varying ingredients depending on what I have on hand. This time I decided to add feta cheese and cranberries to mix it up a bit.

Occasions to make this broccoli salad

  • Birthday parties
  • Potlucks at work
  • 4th of July or Labor Day parties
  • Camping (I love bringing this camping since it’s easy to transport and a fantastic way to get in veggies while you’re away from home!)
  • For lunch
  • A side dish with dinner

The possibilities are endless with this type of recipe, so be creative with changing up the ingredients and bring it to just about any party.  It’s sure to be a crowd pleaser!
