Baked Sweet Potato Chips

These Baked Sweet Potato Chips are baked not fried and make a healthy addition to burgers, sandwiches and more!

This past weekend our kids thought it was the middle of the summer and for Michigan that’s remarkable.

They went swimming (more like waded) in our lake practically all day Saturday. Mind you the lake is FRIGID, but it didn’t even phase them one bit! It was however 80 degrees outside so that helped.

We ended up hanging out with a family in the neighborhood and ended the day with a bonfire.

Quite an overall fantastic day. 

Since that day I have been dreaming up all sorts of grilling ideas.

Since my kids will be outside practically all summer long I figure I better plan to grill a lot.

These sweet potato chips would pair great with grilled burgers, chicken or just about anything.

When it comes to making these, make sure to cut them into equal slices. This helps them to all get crispy without burning the edges (which happened to a few of mine).

I also did not serve a dip with them since I treated them more like chips than fries. One more tip I have is to serve them immediately. They definitely taste the best fresh out of the oven.

Dietitian’s Dish

This simple dish is a fantastic simple way to enjoy your vegetables this spring and summer. Sweet potatoes are packed full of beta carotene and an excellent source of fiber.

I love to cook with red potatoes too but I especially enjoy the bit of sweetness that comes from sweet potatoes.

Baked Sweet Potato Chips

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes

Ingredients
  

  • 1 large sweet potato sliced thinly
  • olive oil
  • 1/8 teaspoon paprika
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/2 teaspoon dried parsley

Instructions
 

  • Preheat oven to 400ºF. Place a wire cooling rack on top of a rimmed baking pan.
  • Slice sweet potato very thinly with a knife or mandolin slicer.
  • Place potato slices on top of cooling rack.
  • Spray or drizzle olive oil over top of slices.
  • Sprinkle slices with seasoning.
  • Bake for 20-30 minutes or until sweet potato slices are crispy.
