Easy Skillet Pork Stroganoff

This Easy Skillet Pork Stroganoff recipe is a simple weeknight meal and includes lean pork tenderloin. It takes less than 30 minutes to go from skillet to dinner table!

I’ve visited a few pork farms during my time as a blogger and they have been so insightful. The tours included one in Minnesota and one in Michigan, my home state.

My Minnesota visit was amazing since we were really able to see a first-hand look at how pigs are raised including the day-to-day operations of pork production.

The pork trip to Michigan was even more memorable since it was in my home state. And if you know anything about Michigan, you’d know we have a ton of variety in agriculture and farming. 

Now that it’s winter, it’s time to enjoy some simple yet satisfying meals like this pork stroganoff. It’s perfect for cool, crisp evenings.

I’m always looking for a quick meal that is nutritious and also enjoyed by my whole family. This is especially important after a long day at work.

Thankfully this recipe I’m bringing you today is a hit and is going on my regular meal rotation.

Ingredients Needed for This Pork Stroganoff

  • Pork tenderloin
  • Sweet onion
  • Olive oil
  • Mushrooms
  • Egg noodles
  • Sour cream
  • Spices: garlic, smoked paprika, salt, black pepper, parsley

How to Choose the Best Cut of Pork for This Skillet Pork Stroganoff

You may feel that purchasing pork can sometimes be intimidating, at least I do.

Dietitian’s Dish

Pork is a fantastic source of protein and it also contains several important nutrients.

Vitamins and minerals found in pork include vitamin B-6, thiamin, phosphorus, niacin, selenium, zinc, riboflavin and potassium.

Several cuts of pork fall under the “lean” category which means for a 3-ounce serving, it contains:

  • Less than 10 g of total fat
  • Less than 4.5 g of saturated fat
  • Less than 95 mg of cholesterol

An easy way to find a lean pork option is to search for cuts that include “loin” or “chop” in the name.

Lean Pork

Lean cuts of pork include:

  • Pork Tenderloin
  • Sirloin Pork Chop
  • Sirloin pork Roast
  • New York Pork Chop
  • Porterhouse Chop
  • Ribeye Pork Chop
  • Pork Loin Roast

And for even leaner choices you can choose an “extra lean” cut like pork tenderloin.

For a 3-ounce serving, extra lean is classified as:

  • < 5g total fat
  • < 2g saturated fat
  • < 95 mg cholesterol 

Pork tenderloin that is used in this recipe has 120 calories, 3 grams of total fat, 1 gram of saturated fat and 62 mg of cholesterol for a 3-ounce serving.

I’m pointing this out not so we can focus on calories, etc. but to make a point that pork can be a nutritious option in just about everyone’s diet. Except those who are vegetarians or don’t eat it for religious reasons.

Be aware that calories and fat content can vary greatly depending on the cut of pork, the marinade you use, or any additions such as breading that you add.

In addition to learning a great deal about the various ways pork can be cooked, there were some minor changes made to the recommended cooking temperatures.

The biggest change to how pork should be cooked is whole muscle cuts of pork are safe when cooked to 145°F with a 3-minute rest. Ground pork, however, should still be cooked to 160°F.

Time Saver Tips

  • After a trip to the grocery store, chop up fresh vegetables like onions and peppers and store them in the fridge for use later in the week.
  • Purchase garlic already minced. You can find minced garlic in a jar in just about any grocery store. Look for minced garlic in water, not olive oil, to save on calories.

Easy Skillet Pork Stroganoff

Prep Time 15 minutes
Cook Time 15 minutes

Ingredients
  

  • 1 pound pork tenderloin, cut into cubes
  • 1 large sweet onion, sliced
  • 1-2 tablespoons olive oil
  • 10 ounces mushrooms, sliced
  • 2 teaspoons garlic
  • 1 teaspoon smoked paprika
  • 1 cup sour cream
  • salt and black pepper
  • fresh parsley
  • 3 cup uncooked whole wheat egg noodles

Instructions
 

  • Cook egg noodles according to directions.
  • Saute onions and garlic with 1-2 tablespoons olive oil over medium heat. Cook for about 5 minutes or until onions are translucent. Remove onions from pan and set aside.
  • Season pork with salt and pepper and place in heated skillet. Cook just until internal temperature of pork reaches 145 degrees (be careful not to overcook).
  • Add onions, mushrooms and smoked paprika to skillet. Stir in sour cream.
  • Bring to a simmer for about 5 minutes or until it begins to thicken.
  • Serve with egg noodles and top with parsley.
