Have I ever told you that I never drank coffee until I had my third child (E)? That says a lot about his personality, doesn’t it? I sort of resorted to coffee to be able to function the first year of his life and have continued since then. I’m sure many of you parents can relate. 

And yes, cookies for breakfast. How can it get much better than that?! Seriously, I love coming up with a variety of breakfast options for myself and my family. Most of the time I eat my homemade granola as do my kids (or some kind of whole grain cereal). I branched out a bit this time and made these simple almond breakfast cookies made with Simply Pure® Creamer. And they turned out amazing! And although I change up breakfast on occasion, one thing that stays the same for me is coffee, coffee and coffee every morning. And it’s a must to include creamer.

Since I started drinking coffee I have experimented a ton with different creamers and sugar combinations. Recently I discovered the Simply Pure® Creamer brand that contains only 5 ingredients and is made with real milk, cream, and sugar. At times, especially when I first started drinking coffee, I’ve been known to put way too much creamer in my coffee (ask my husband, he often ask whether I’d like some coffee with my creamer). However, with Simply Pure® Creamer both the vanilla and caramel flavors are strong enough that they don’t require as much creamer to make the coffee taste delicious.

How fun is it to eat “cookies” for breakfast?! Seriously, even as an adult I love the thought of eating cookies for breakfast, even when I know they are full of nutritious ingredients. And when using oats (whole grains), almond or peanut butter (protein) and flaxseed (healthy fats), you can’t go wrong! And these cookies are super simple to make, literally a 2-step process. Mix all ingredients in a bowl and add to a baking sheet to bake. Then time to enjoy!

Vanilla Almond Breakfast Cookies

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients
  

  • 2 cups old fashioned oats
  • 1/4 cup flaxseed
  • 1/4 cup Simply Pure® Creamer vanilla
  • 1/4 cup honey
  • 1/4 cup almond butter or peanut butter
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 banana mashed

Instructions
 

  • Preheat oven to 325ºF.
  • Combine all ingredients in a bowl and mix well.
  • Scoop dough the size of about 2 tablespoons each onto a baking sheet. Flatten dough with hand.
  • Bake for 15-18 minutes or until cookies are golden brown.

Hi! Do you have any recommendations for a substitute for the creamer? Perhaps almond milk and vanilla? Dairy free, here. Thanks!

Hi Kate, there is actually a Silk Almond creamer that is dairy free and vanilla flavored, but I also believe almond milk and vanilla would work as well.

I added up my calories and it was 1,499 for the dough.. and I made 28 cookies (small cookie dough scoop). They were 53 calories per cookie.

Hi Lisa, unfortunately I do not do nutrition calculations for my recipes at this time. If you'd like a general breakdown of the recipe I would use something like www.myfitnesspal.com to get a rough idea of nutrient content. Hope that helps!

i've never used flax seeds, does the flaxseed have to be ground up or just used whole?

Yes it should be ground flaxseed. I purchase it already ground which makes it much easier. Nutrients from whole flaxseed can't be absorbed by our bodies thus not providing the nutrients from flaxseed (like omega 3s).
