This Slow Cooker Southwest Beef Pot Roast is a perfect weekday meal since you can throw it in the slow cooker in the morning and have it ready to eat after a long day of work!

We are setting records all over the map here in Michigan with last week’s frigid temperatures. Thankfully we have meals like this slow cooker meal to warm our insides while the outside weather is ridiculously frigid (at least here in Michigan). However, despite the record breaking temperatures lately, we are still trying to make the best of it.

This past weekend we got out on our lake and ice skated and explored our lake. The kids even made a snow jump on our mini hill in the backyard. I swear the frigid weather doesn’t affect the kids one bit!

Later that day we enjoyed this delicious slow cooker recipe which definitely hit the spot. This Southwest Pot Roast recipe is a nice twist on traditional pot roast and is bursting with flavors. Dietitian’s Dish

Recipes like this pot roast make me think all about comfort foods. Although some people’s definition of comfort food is high fat, high sugar foods, to me comfort foods are hearty and satisfying meals that are also nutritious. When thinking comfort foods, follow these simple tips to keep meals healthy yet still delicious.

  • Add extra vegetables to whatever dish you’re preparing, it’s especially easy with stews, chili and casseroles.
  • Choose lean meat as the protein source. 
  • When possible, swap out full fat dairy with lower fat options.
  • Watch your portion control. A 3-ounce serving is about the size of a deck of cards or a smart phone.

Beef Pot Roast

Prep Time 15 minutes
Cook Time 8 hours
Total Time 8 hours 15 minutes

Ingredients
  

  • 2-3 pound Eye of Bottom Roast boneless
  • 1 red pepper chopped
  • 1 medium onion chopped
  • 2 tablespoons lime juice
  • 2 teaspoons minced garlic
  • 2 teaspoons cumin
  • black pepper and salt to taste
  • 2 cups beef broth
  • 1 4.25 ounce can green chilies
  • 1 13 ounce can corn
  • Optional: 3 cups Brown rice
  • Optional toppings: fresh Cilantro sour cream, green onions, Mexican-style shredded cheese

Instructions
 

  • Add onions and red pepper to bottom of slow cooker followed by roast.
  • Add spices, beef broth and lime juice to slow cooker.
  • Cook on low for 8-10 hours or high for 6-8 hours.
  • Add green chilies and corn. Cook for another 30-60 minutes.
  • Serve with brown rice and garnish with optional toppings.
