This Slow Cooker Shredded Mexican Chicken recipe is so simple to put together and versatile enough to make into a variety of meals include tacos, quesadillas, nachos and more!
The slow cooker strikes again! I am constantly on the lookout for a variety of slow cooker meals that involve very little prep, contain a good amount of veggies and protein and of course something my entire family will enjoy. But of course the last desire varies depending on the day, week and the mood of my children so you never know.
When it comes to Mexican food for my husband and I, our opinions have varied greatly over the years. Dan has always been a big fan of Mexican food. Personally I enjoy homemade Mexican food (as evidenced by my long list of Mexican-inspired blog recipes) but Mexican restaurants were never on my radar when it came to eating out…until recently. We have an authentic Mexican restaurant about a mile from our house which I am constantly craving. I typically order a la cart and order some combination of chicken enchilada/chicken quesadilla/tostada/chalupa. This of course led to the inspiration of this simple shredded Mexican chicken recipe.
When eating Mexican foods there are several ways to make it more nutritious. Start by adding more vegetables to whatever dish you’re making. I almost always add peppers and onions, and salsa is a fantastic addition to just about anything Mexican. Also, guacamole is a nutritious choice and is high in healthy fats. There are also plenty of whole wheat tortillas available at most major grocery stores. Just keep in mind portion control when it comes to the amount of cheese and sour cream you add to your meal to keep calories and saturated fat in check.
