Slow Cooker Corned Beef and Cabbage

I’m at it again with one of my favorite cooking methods…the slow cooker.

With St. Patrick’s Day fast approaching and my husband asking yearly for corned beef and cabbage I finally got around to making it. I chose the slow cooker method for obvious reasons, mainly because I can throw it all in the pot and forget about it.

We’ve already been celebrating St. Patrick’s Day a bit with the kids with my Green Mac & Cheese meal (which was a big hit!). And of course I couldn’t resist making green Rice Krispies Treats. 

This time I decided to make an adult focused meal, beer included!

For the liquid in the slow cooker, I added a bottle of beer and beef broth. Of course, you can always substitute water for beef broth or more water if you’d rather not cook with beer.

Dietitian’s Dish

I originally planned to make my own corned beef without the seasoning packet.

However, after thinking about it a little more I realized the quicker the better with this meal. Since that’s mainly the point when using a slow cooker, right?!

And in my opinion, it’s so worth it. Not only do you not need to worry about having additional spices, but you also save time. And that is a win-win in my book.

Slow Cooker Corned Beef and Cabbage

Prep Time 5 minutes
Cook Time 8 hours
Total Time 8 hours 5 minutes

Ingredients
  

  • 3 pounds Corned Beef Brisket
  • 3 teaspoons minced garlic
  • 1 large onion, chopped
  • 4 red skin potatoes, chopped 1
  • cup baby carrots
  • 12 ounces beer
  • 1 cup beef broth (or water)
  • 1/4 cup fresh parsley leaves
  • 1/2 green cabbage, chopped

Instructions
 

  • Add the minced garlic, onion, potatoes and carrots to slow cooker followed by the corned beef.
  • Add the beef broth and beer to the slow cooker.
  • Cook for 7-8 hours on high or 9-10 hours on low.
  • Add the cabbage 1-2 hours before beef is done or until cabbage is tender.
  • Top with parsley before serving.
