This Slow Cooker Butternut Squash Soup is amazing comfort food. It’s not only delicious but also has a secret ingredient that adds a bit of sweetness without tons of calories!

I want to be clear that one food or one activity you do will not greatly change your health status. But rather, simple changes that lead to long-term lifestyle changes can make a great impact on your health. 

This recipe is a good example of how to eat a nutritious, diabetic-friendly meal without compromising flavor. The “secret” ingredient I used was Truvia® Nectar. It’s an excellent alternative when you want to add honey to recipes.

The new 2015-2020 Dietary Guidelines for Americans recommend limiting added sugars to less than 10 percent of total daily calories.

And this zero-calorie sugar substitute like stevia – the non-calorie sweetener found in Truvia® Nectar, can help you manage your weight and reduce the risk of certain diseases.

Dietitian’s Dish

Slow Cooker Butternut Squash Soup

Prep Time 10 minutes
Cook Time 4 hours
Total Time 4 hours 10 minutes

Ingredients
  

  • 1 butternut squash peeled, seeded and chopped
  • 1 medium onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 2 apples peeled, cored and chopped
  • 4 cups chicken or vegetable stock
  • 2 tablespoons Truvia® Nectar
  • 2 teaspoons minced garlic
  • 1 teaspoon nutmeg
  • 2 teaspoons fresh sage chopped
  • black pepper to taste

Instructions
 

  • Add all ingredients to slow cooker.
  • Cook for 4 hours on high or 7-8 hours on low.
  • Let cool and puree soup using an immersion blender or add batches to a blender to puree.
