Simple Parmesan Spaghetti Squash

I had a friend over along with her two kids for a play date the day I was making this squash. My friend had never made spaghetti squash but loved it once she tried this recipe.

The best part was her daughter who’s a picky eater tried it and loved it too. She loved it so much that my friend bought her own and made it the following week.

It just goes to show what you could be missing out on when you don’t know what’s out there.

Does anyone want to cook for me so I can try something new? I’m up for pretty much anything (as long as I’m not cooking it). 

The best part about this recipe is that you do NOT need to cut it before cooking it.

That’s one thing that sometimes dissuades me from cooking squash. It’s a big pain to cut or peel it before you cook it.

Well for this recipe, all I did was cut several slices in the squash, place it on a rimmed baking sheet and baked it. Super simple!

Spaghetti squash contains antioxidants that can help protect you from eye diseases later in life and contain about 40 calories per cup. This is compared to pasta that has about 240 calories per cup.

I’m not saying one is better than the other since ach has different nutrients that are beneficial. But, if you’re looking to cut calories try substituting spaghetti squash for pasta on occasion.

This type of squash is quite unique since after it’s cook. All you need to do is use a fork to scrap out the insides and they come out like spaghetti noodles (hence the name).

Then feel free to add Parmesan cheese like I did or just pasta sauce.

Prep Time 10 minutes
Cook Time 1 hour 30 minutes
Total Time 1 hour 40 minutes

Ingredients
  

  • 1 spaghetti squash
  • 3 tablespoons light butter
  • 3 tablespoons fresh parsley
  • black pepper and salt
  • 1/4 cup Parmesan cheese

Instructions
 

  • Preheat oven to 375°F.
  • Make several cuts in spaghetti squash and place on a rimmed baking pan.
  • Bake for 1 hour and 20 minutes.
  • Remove seeds and using a fork scrap out the insides.
  • Add butter to a large skillet over medium heat. Add spaghetti squash, black pepper, salt and parsley.
  • Cook for about 10 minutes.
  • Mix in Parmesan cheese right before serving.
