Roasted Parmesan Zucchini Fries

These Roasted Parmesan Zucchini Fries are the perfect crispy and tasty side dish to spice up your regular vegetable rotation.

We are in full swing with fresh Michigan produce.  There are so many fresh fruits and vegetables that are in season now it’s hard to keep up.  

Zucchini is in season from about July through October here in Michigan and I can’t get enough of it.

Ingredients Needed for These Parmesan Zucchini Fries

  • zucchini
  • eggs
  • whole wheat Panko crumbs
  • Parmesan cheese
  • Italian seasoning
  • garlic powder

It’s no surprise that zucchini is healthy for you.  It contains magnesium (helps to maintain strong bones), folate (helps support cell growth and metabolism), and fiber which helps keep your bowels regular while helping with satiety.

Not only is zucchini nutritious, but this recipe is a good example of how to add variety to your meals.

I could have easily just sliced these and roasted them with black pepper and salt and sprayed them with olive oil.  

But adding the Parmesan cheese and bread crumbs adds that much-needed variety we all need.

At least personally I get sick of eating the same exact foods over and over again. Hence, one reason I have a blog that forces me to experiment constantly.

And I want my kids to experience as much variety as possible too.  

You may be wondering what dip I used for this recipe.  

Well, it’s good old store-bought ranch dressing.  And to my surprise, my kids loved the zucchini fries without any dipping sauce.  

So dip or no dip, branch out and try these zucchini fries, your taste buds will thank you.

Parmesan Roasted Zucchini Fries

Crispy, tasty and nutritious fries!
Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes

Ingredients
  

  • 3 medium zucchini sliced
  • 2 egg whites
  • 1 cup whole wheat Panko crumbs
  • 1/4 cup Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder

Instructions
 

  • Preheat oven to 425 F.
  • Slice zucchini into equal parts.
  • Lightly beat egg whites in a bowl.
  • In another bowl combine panko crumbs, Parmesan cheese, Italian seasoning and garlic powder.
  • Working with a few zucchini sticks at a time, dip them into the egg whites then into the panko crumbs mixture.
  • Space zucchini sticks evenly on a baking sheet lined with aluminum foil and sprayed with non-stick cooking spray (I use my olive oil Misto sprayer).
  • Bake for 15-20 minutes or until fries are crispy.

These look great and i think I could actually get my kids to eat zucchini if I make it this way. Question though - zucchini releases so much water when cooked. How do you prevent these from getting mushy?
