I am obsessed with one pan meals.

You’ll likely be seeing this current trend lasting quite a while. You can’t go wrong with just one dirty pan to clean and vegetables already added to the meal.

Like I mentioned earlier in the week, I don’t love spending hours in the kitchen in the middle of the summer (or any time of year for that matter).

So I purposely create simple, nutritious recipes that get me in and out in about 30 minutes similar to my Ground Beef & Spinach Tortellini Skillet recipe I posted earlier this week.

Ground Beef Spinach Tortellini Skillet

I could seriously eat this entire pan myself (NO I’m not recommending it!).

It’s just so light since it contains no potatoes or other starchy vegetables.

This is absolutely one of my favorite meals and the kids love it too!

And if I’m totally honest, my husband does not love this recipe as much as my kids and I do. He’d rather have the sausage in a hot dog bun loaded with sauerkraut and mustard and vegetables on the side.

So I’ll buy hot dog buns for you next time honey 😉

Dietitian’s Dish

Do you wonder if you’re ever eating enough vegetables on any given day?

The recommended amount of vegetables per day for adults is between 2 1/2 and 3 cups, depending on your calorie needs. Check out MyPlate for the recommended amounts for all age groups.

Check out a few ways to get the recommended amount of veggies each day:

  • Add vegetables to breakfast: include veggies in scrambled eggs, top your toast with avocado or add spinach or kale to a smoothie.
  • Snacks: serve raw vegetables at snack time or drink a veggie-packed smoothie.
  • Lunch and dinner: start with a salad, always serve a good size serving of vegetables for each meal and change up the way it’s served (roasted, steamed, baked, etc) to prevent boredom.
