Apple and Oat Breakfast Bars

This past fall I was honored to participate in a Michigan Apple Committee blogger event where several bloggers from around Michigan gathered to learn more about Michigan apples and cook up some delicious recipes. I wasn’t feeling my best that day but managed to pull it together to make a few delicious meals including a variation of this butternut squash soup – which was oh so delicious! 

Of course I love adding apples to recipes like these Whole Wheat Apple Raisin Muffins and my favorite Ambrosia Fruit Salad. Since this trip I have also been experimenting more with adding apples to savory dishes (roasted vegetables with apples recipe coming soon!).

These Apple and Oat Breakfast Bars were inspired by my kids. They absolutely love homemade snacks so I thought why not combine apples and oats and create granola bars that would be healthy enough for breakfast but also loved as a snack too. Check out the full recipe on Michigan Apple’s website

Yum! These look delicious, my biggest challenge is getting breakfast bars to stick together like a store bought one! Looks like you accomplished it!
