Meatball Sandwiches

These meatball sandwiches are delicious, cheesy and toasted! What’s not to love?

I am obsessed with toasted sandwiches and subs.  No matter what sub shop I eat at (Pot Belly’s, Subway, Panera Bread, etc.), I always choose a sandwich that can be grilled or toasted.

It must be the mouthwatering cheesiness that happens when you toast the sandwich. Whatever it is, it’s delicious and I can’t get enough.  So I thought, why not try to recreate some sort of toasted sub with my favorite meatball recipe?

You could use frozen meatballs, but I used these Simple Turkey Meatballs. I made them last week and blogged about them on Monday.  And trust me, they are worth the 10 minutes it takes to cook them!

After cooking the meatballs, I added them to whole wheat hot dog buns (because, why not add some whole grains?!).

I used a slotted spoon but then added just a little pasta sauce on top of the meatballs. Then I sprinkled them with Parmesan cheese and mozzarella cheese.

Next, I sprayed the inside of aluminum foil and wrapped up the hot dog bun, and placed it inside a baking pan. As you can see below, I used a 9×11-inch pan that held 4 subs.  You could also use a flat baking pan too.

A great thing about these sandwiches is you can make them ahead of time without them getting soggy.  I actually cooked them and put them in the fridge for 2 days. Then I placed them back in the oven for another 20 minutes. And surprisingly the buns still came out nice and toasted.  I also gave a few to my husband to take to work and he put them in the toaster oven to reheat and said they were delicious. So as you can see there are many options of how to reheat these and enjoy as leftovers as well.

  • Sprinkle about 1 tablespoon of Parmesan cheese and 1 tablespoon of mozzarella cheese over top of each hot dog bun.
  • Place each meatball sandwich in foil, coat the inside of the foil that touches the cheese with non-stick cooking spray.
  • Place foil wrapped sandwiches in a baking pan or baking sheet.

Notes

If you are eating the sandwiches the next day you may want to add a little extra pasta sauce on top of the meatballs before reheating.
