Apparently, I’m on a pie-making kick which is sort of amusing since I’m not a fanatic about pies.

I made this No-Bake Strawberry Pie this past month. And let me tell you, it was a HUGE hit with my family and readers!

I even enjoyed it and that’s saying a lot for a girl who normally would pass on any kind of fruity dessert and go straight to the chocolate. 

So needless to say this no-bake chocolate pie is right up my alley.

Not only is there chocolate in the name, but it takes a whopping 15 minutes to prep with the remaining time left for the freezer.

And that means more time to enjoy these gorgeous Michigan summer days.

So you may be thinking how light is this dessert?

Well, it’s still dessert and sometimes I enjoy rich, full fat, full-calorie desserts.

However, I also love to watch my health and can do that by baking (and eating) healthier versions of my favorite desserts.  

My main focus to healthy living is moderation which still allows for enjoying sweets just in the right quantity and serving size.

A few substitutes I made in this pie versus a full fat/full sugar dessert include: using a lighter cream cheese alternative (Neufchatel cheese), skim milk versus whole milk, reducing the sugar and using lite whipped topping instead of regular whipped topping.

This dessert also contains two different dairy ingredients, which not only means more calcium, but also protein.

Lightened Up Frozen Chocolate Pie

A rich decadent chocolate pie, sure to fulfill any chocolate craving!
Prep Time 3 hours 15 minutes
Total Time 3 hours 15 minutes

Ingredients
  

  • 4 oz. neufchatel cheese softened
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar
  • 2 oz. semi-sweet baking chocolate
  • 1/3 cup + 1 tablespoon skim milk
  • 1/3 cup cocoa powder
  • 8 oz. container of lite whipped topping divided
  • chocolate graham cracker crust
  • mini chocolate chips

Instructions
 

  • Combine the baking chocolate and 1 tablespoon of milk and microwave at 50 percent for 1 minute or until melted.
  • Cream neuchatel cheese, vanilla extract, sugar and melted chocolate until well blended.
  • Add the cocoa powder and 1/3 cup of milk alternating each slowing while mixing on low speed.
  • Add half of the whipped topping to the batter. Stir until combined.
  • Pour batter into chocolate graham cracker crust.
  • Add remaining whipped topping to top of batter and sprinkle with mini chocolate chips.
  • Freeze for about 3 hours or until ready to serve.
