Here is just a sample of what I received in my box this past week. Yes, even frozen foods and fragile foods like eggs are shipped right to your door. I was actually a bit hesitant to order eggs because of the nature of their fragility but to my surprise they were very well packaged and arrived with no casualties!

For this recipe I decided to branch out a bit and be a bit adventurous. So if you’re looking to up your weekend breakfast routine or looking to wow your guest for a brunch you’ve got to try these egg stuffed peppers. They were actually quite simple to make. 

Dietitian’s Dish

Eggs have gotten a bad rap on and off for years. As a dietitian I have not sworn off any type of food indefinitely (except maybe those containing trans fat with the fairly recent research). Eggs have many great nutrients with one egg containing 70 calories, 6 grams of protein, and 13 other essential vitamins and minerals (many of them found in the yolk). So pairing eggs with nutritious foods like peppers, spinach and dairy makes a perfect breakfast choice any day of the week.

Grilled Egg Stuffed Peppers

Ingredients
  

  • 4 bell peppers red and yellow
  • 10 eggs
  • 1 cup fresh spinach leaves finely chopped OR frozen spinach, drained and thawed
  • 1/4 cup skim milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup grated sharp cheddar cheese

Instructions
 

  • Cut peppers in half, removing seeds and membranes.
  • In a bowl whisk together eggs, milk, spinach and seasonings.
  • Pour egg mixture evenly into each half pepper.
  • Sprinkle cheese over top of each egg stuffed pepper.
  • Place on grill over low heat for 25-30 minutes or until eggs are set.
