Frozen Chocolate Graham Cracker Sandwiches

These light and creamy Frozen Chocolate Graham Cracker Sandwiches are the perfect refreshing treat during these warmer summer months.  But then again who am I kidding, I would eat these any time of year!

This past weekend, it was HOT HOT HOT!  

Thankfully we visited a beach for the day to enjoy the weather instead of loath it since it will be snowing in no time!

The kids can’t get enough ice cream and are always thrilled when I make different ice cream creations like these Frozen Chocolate Graham Cracker Sandwiches.  

Simple Ingredients to Make These Hot to Make These Frozen Chocolate Graham Cracker Sandwiches

  • Instant chocolate pudding
  • Skim milk
  • Whipped topping
  • Chocolate graham crackers
  • Walnuts, mini chocolate chips optional

To speed things up, I used good old chocolate pudding (a childhood favorite of mine).  

Hot to Make These Frozen Chocolate Graham Cracker Sandwiches

They came together in just a few minutes and were perfect for a hot summer day. 

First, make the pudding according to the directions.

Next, stir in the whipped topping and let sit for about 5 minutes.

Then separate the graham crackers onto parchment paper.

Now place equal amounts of the pudding mix onto the cracker bottoms. Then place the top of the crackers over the pudding.

Carefully dip each side of the sandwich into a bowl of chopped walnuts and mini chocolate chips.

And finally, place them in the freezer for about 1 hour, then remove for about 20 minutes before enjoying.

These were a bit messy, but my kids don’t care if there is pudding running out of the crackers and neither do I!

Dieititian’s Dish

Yes, a dietitian made ANOTHER chocolate dessert.  

It’s National Ice Cream Month and 90 degrees in Michigan lately so I couldn’t resist.  But honestly, these sandwiches are mostly made of skim milk and chocolate pudding which is a fairly healthy dessert.  

And the best part is that they are individually portioned. So just grab one and drink a big glass of water or skim milk and enjoy some active summertime activities!

Frozen Chocolate Graham Cracker Sandwiches

A light chocolate “ice cream” treat that’s the perfect portion size!

Ingredients
  

  • 3.9 oz. package of instant chocolate pudding
  • 1 3/4 cup skim milk
  • 1 cup whipped topping
  • 12 sheets of chocolate graham crackers
  • 1/2 cup walnuts finely chopped (optional)
  • 1/2 cup mini chocolate chips optional

Instructions
 

  • Beat pudding mix and skim milk for 2 minutes.
  • Stir in whipped topping until combined.
  • Let sit at least 5 minutes.
  • Place half of each graham cracker sheet on a cookie sheet covered with parchment paper.
  • Add about 1/2 cup of mixture onto each graham cracker square.
  • Optional: dip each side of the sandwiches with chopped walnuts or mini chocolate chips.
  • Place in freezer for at least 1 hour before enjoying then let thaw about 20 minutes before enjoying.

Notes

Make sure to remove all the air from the bags before freezing the sandwiches.
