Easy Cheesy Beef Roll Ups

Ever have a recipe you’d like to cook that doesn’t require a pound of beef?

I typically try to make recipes that call for one pound of ground beef since it’s obviously simpler to cook by the pound because that’s how it’s packaged at the store.

However, sometimes I want to use only half a pound so I try to get creative with how I can use the other half.

Since I needed only half a pound of ground beef for these Cheesy Egg & Beef Breakfast Muffins, I cooked the entire pound of ground beef with the peppers and onions all at once.

This lead to these simple cheesy beef roll ups that were an instant hit in my house.

Dietitian’s Dish

You may wonder why I cook with ground beef so often. I cook with lean or extra lean ground beef mainly because it’s an excellent source of lean protein and it’s so versatile.

Here are a few ways I use ground beef to make quick nutritious meals:

Burger night (typically with sliders since the kids enjoy those the best).

Added to spaghetti noodles or cheesy tortellini.

Easy Cheesy Beef Roll Ups

Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes
Servings 4

Ingredients
  

  • 1 tablespoon olive oil
  • 1/2 large onion finely chopped
  • 1/2 yellow pepper finely chopped
  • 1 Guindilla Verde pepper finely chopped
  • 1/2 pound extra lean ground beef
  • 1 teaspoon no-salt all-purpose seasoning
  • 2 crescent roll containers
  • 2 green onions chopped
  • 8 ounce Neufchâtel cheese softened
  • 1/2 cup sharp cheddar cheese

Instructions
 

  • In a large skillet add oil, onions and peppers. Sauté until tender.
  • Add ground beef and cook until beef is browned.
  • Preheat oven to 350°F.
  • Spread crescent rolls out flat on baking sheet.
  • Combine cooked and cooled beef mixture with green onions and Neufchâtel cheese. Stir until combined.
  • Add about 1/4 cup of beef/cheese mixture to top of each crescent roll.
  • Sprinkle about 1 tablespoon of shredded cheese on top of beef mixture.
  • Wrap each roll starting from the larger side of the triangle.
  • Cook for 15 minutes or until rolls are golden brown.
