Easy Baked Beef Meatballs

These Easy Baked Beef Meatballs are freezer-friendly and perfect for adding to pasta or sandwiches. And perfect as an appetizer over the holidays!

Whether you’re gearing up for some holiday entertaining or just want simple quick meals for your family, this beef meatballs recipe is a must-have.

These meatballs are the basis for several meals I make. They are so versatile you can make several recipes from them and never get bored!

Ingredients Needed for These Beef Meatballs (full recipe below)

  • lean ground beef
  • onion
  • whole wheat Panko crumbs
  • eggs
  • garlic powder
  • black pepper and salt

I always have at least a few pounds of frozen lean ground beef in the freezer to use as the protein for a quick dinner for my family.

When I purchase lean ground beef it’s typically in a 5-pound package from Sam’s Club. I’ll then freeze ot by the pound in plastic freezer bags like in the picture below.

I like to spread out the ground beef in the bag since it helps speed up the thawing process which I do in the refrigerator most of the time. Or I’ll run it under really cold water in the sink if I’m pressed for time.

When I’m making these meatballs I will make two pounds of them using fresh beef I just purchased, bake them, then freeze half of the meatballs for later use.

They are so nice to have on hand since they are simple to add to several dishes even while still frozen.

Here are some of my go-to ideas for these meatballs:

  • Add them to pasta sauce or a simple high protein spaghetti meal.
  • Serve them in whole wheat hot dog buns topped with pasta sauce and mozzarella cheese.

Easy Baked Beef Meatballs

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 42 meatballs

Ingredients
  

  • 2 pounds lean ground beef
  • 1 medium onion finely sliced
  • 1/2 cup whole wheat Panko crumbs
  • 2 eggs
  • 2 teaspoons garlic powder
  • black pepper and salt to taste

Instructions
 

  • Preheat oven to 400ºF. Spray a rimmed baking pan with non-stick cooking spray or line with aluminum foil (I do both).
  • Combine meatball ingredients. Form into even size balls.
  • Bake for 15-20 minutes or until browned and thoroughly cooked.
