Chopped Winter Salad with Butternut Squash, Kale and Lemon Honey Dressing

I have another fantastic recipe for you all today. Hopefully you’re not getting sick of my “SIMPLE” theme already because I’m loving it.

It’s actually two recipes in one. The chopped salad is one, and butternut squash is another. I posted my roasted butternut squash recipe on Monday if you’d like to check it out.

I’m a huge fan of kale salads because you can add dressing to them and they keep for a few days without getting soggy!

I made this salad while keeping in mind winter vegetables like the butternut squash. When my husband works late, I will either eat dinner with my kids or alone, in peace after they go to bed.

And I’m not sure about you but I cook ALL THE TIME. However, there are some days I just don’t want to eat what I made. Is that weird?!

That’s why I will have a few frozen (yet still good for me) meals in the freezer. I’ll either add a salad like this winter kale salad or roasted vegetables as a side dish.

This past month I picked up four varieties of the Lean Cuisine Marketplace meals. The meals included: Vermont White Cheddar Mac & Cheese, Sesame Chicken, Mushroom & Spring Pea Risotto, and Ricotta Cheese & Spinach Ravioli.

I shop at Target quite a bit since they gained a full grocery section at our local store. I love it because they have quite an assortment of nutritious food and extra-large shopping carts to hold two children plus a ton of groceries.

They also have soft pretzels at the entrance to entertain my kids for a few minutes while I shop. It’s all about balance.

This past week I paired this chopped winter salad with the Vermont White Cheddar Mac & Cheese for an excellent combo (mac & cheese is not just for kids, right!?).

Kale has been quite the popular green leafy vegetable for the past years and rightfully so.

Kale is a powerhouse vegetable containing only 33 calories per 1 cup.

It also contains several important nutrients including vitamin A, vitamin K and vitamin C among others in addition to disease-fighting antioxidants.

Chopped Winter Salad with Butternut Squash, Kale and Lemon Honey Dressing

Prep Time 1 hour 10 minutes
Total Time 1 hour 10 minutes
Servings 4

Ingredients
  

Salad

  • 4 cups kale, chopped
  • 2 medium carrots, chopped
  • 1 cup roasted butternut squash, cubed
  • 1/2 cup beets, canned and drained
  • 1/2 cup feta cheese
  • 1/2 cup pecans, chopped

Lemon Honey Dressing

  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • salt and black pepper

Instructions
 

  • Combine all salad ingredients in a large bowl.
  • Whisk together all salad dressing ingredients until well combined.
  • Add dressing to salad and stir gently until well coated.
  • Refrigerate for at least 1 hour before serving to allow dressing to soften kale leaves.

Notes

Salad will stay fresh for at least 2 days in the refrigerator.

I love salads like this! Actually having a roasted winter root veggie salad for dinner tonight (it's my January recipe for Today's Dietitian!). These new Lean Cuisine meals look great too. Can't wait to check out the info on them!
