Chocolate Peanut Butter Rice Krispie Bars

It’s been awhile since I’ve posted something indulgent.  

Now don’t get me wrong, it’s not that I haven’t been indulging myself, it’s just that the sweets I’ve been consuming (chocolate chip cookie/dough) are not too exciting to blog about.  

And since I’ve been on a Rice Krispies Treats kick (I recently made Rice Krispies Treat “Paint Brushes” as part of a house warming gift) my love of chocolate and peanut butter never falters, so I thought I’d create these mouthwatering Chocolate and Peanut Butter Rice Krispies Bars. 

Old School Version

And I don’t know about you, but I prefer to make my Rice Krispies Treats old school, using the stovetop.  

Yes, it’s much easier to make them in the microwave but the marshmallows get too gooey for my preference (if that makes any sense).  So I’ll be sticking with my grandmother’s antique pan on the stovetop.  

Anyone else use the stovetop for cooking Rice Krispie Treats?  What about Guardian Service cookware?  

The pan and handle pictured below is Guardian Service cookware that has lasted a ridiculously long time.  Made in the United States from around the 1930s to the 1950s, this cookware is made out of hammered aluminum and obviously made to stand the test of time.  

And although the pans weigh A TON they cook food great!  

This pan/handle combo is by far one of my favorite kitchen tool combos.  Now that you’re had your history lesson for the day back to the recipe!

Chocolate Peanut Butter Rice Krispie Bars Kid tested AND approved!

One thing to note is the chocolate and peanut butter topping will harden in the refrigerator after about 20 minutes, but it will also start start to soften once you take them out of the refrigerator.  

So I packed the bars along with my kids’ lunches and an ice pack and they were the perfect consistency as you can see for JP, Kee and my friend’s daughter to enjoy after lunch.

Chocolate Peanut Butter Rice Krispies Bars

An amazing indulgent treat for chocolate and peanut butter lovers!

Ingredients
  

  • 6 cups Rice Krispies cereal
  • 4 cups mini marshmallows
  • 3 tablespoons butter
  • 1 cup milk chocolate chips
  • 1/2 cup peanut butter

Instructions
 

  • Melt butter in a medium pan on the stove top.
  • Add marshmallows. Stir until melted and then remove from heat.
  • Add Rice Krispies cereal to marshmallows and stir until cereal is coated.
  • Add mixture to a 11 x 7 inch pan.
  • Let cool.
  • Combine peanut butter and chocolate together in a microwave-safe bowl and heat at about 50 percent for 2 minutes, or until completely melted.
  • Add chocolate and peanut butter mixture to top of Rice Krispies bars. Use a spatula to evenly distribute the topping across the treats.
  • Refrigerate until topping has set.

Notes

You can add butter or shortening to the chocolate and peanut butter mixture to keep it hardened once removing from the refrigerator.

I loved rice krispies so much as a child! I don't eat them anymore cause I'm a vegetarian and marshmallows aren't veggie friendly, but I have many fond memories of making rice krispies with my mom when I was a kid. Chocolate peanut butter is such a classic and yummy combo, I bet these rice krispie bars are yummy!
