Cheesy Beef and Bean Dip

This Cheesy Beef and Bean Dip is the perfect appetizer for Super Bowl parties or any type of gathering!

The day before Super Bowl Sunday our daughter turns 4! And we’re celebrating her birthday on Sunday evening.

Maybe she’ll learn to love football or despise it, who knows?

Personally, I enjoy football especially college football. Honestly, this is probably awful to admit as a food blogger but I’d much rather be enjoying the game than cooking the food associated with the game.

This may be because I cook ALL THE TIME. And I actually enjoy watching football.

With that said, I still LOVE to eat and need to cook not only for myself but for my entire family.

So why not make it interesting, right?!

Ingredients Needed to Make This Cheesy Beef and Bean Dip

  • Ground beef
  • Onion
  • Olive oil
  • Taco seasoning 
  • Neufchatel cheese
  • Refried beans
  • Mild green chilies
  • Diced tomatoes
  • Shredded Mexican-blend cheese

Dietitian’s Dish

Last month I discussed a few cost-saving tips when it comes to purchasing beef.

My favorite strategy is looking for extra lean ground beef when the sell-by date is near because this typically drops the price by at least a few dollars.

However, when you get the meat home how long should you keep it in the fridge or freezer?

Follow these recommendations for fresh (raw) and cooked ground beef:

  • Fresh ground beef can last in the refrigerator for 1-2 days.
  • Cooked ground beef can stay in the refrigerator for 3-4 days.
  • Fresh ground beef can be kept in the freezer for 3-4 months.
  • Cooked ground beef can keep in freezer for 2-3 months. 

Now with this recipe, it’s very likely it will be gone halfway through your Superbowl party because it’s just that delicious.

So you likely won’t have to worry about leftovers. 

And if you happen to run out of tortilla chips or forget to buy them, you can simply make some!

Cheesy Beef and Bean Dip

A high protein cheesy beef dip that’s sure to please any crowd!
Prep Time 5 minutes
Cook Time 35 minutes
Total Time 40 minutes

Ingredients
  

  • 1 pound extra lean ground beef
  • 1 medium onion, chopped
  • 1 tablespoon olive oil
  • 3 tablespoons taco seasoning or 1 packet
  • 8 ounces neufchatel cheese, softened
  • 1 (16-ounce) can refried beans
  • 2 (4-ounce) can mild green chilies, chopped
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 3 cups shredded Mexican-blend cheese, divided divided
  • fresh cliantro
  • tortilla chips

Instructions
 

  • Preheat oven to 350°F.
  • Over medium heat, add olive oil, onions and beef to a 12-inch cast iron skillet. Cook until beef is browned and onions are tender.
  • In a bowl combine softened Neufchatel cheese and taco seasoning. Mix until well blended.
  • Add cream cheese mixture, refried beans, green chilies, tomatoes and 2 cups of cheese to skillet and stir to combine. Cook until cheese is melted.
  • Top skillet with remaining 1 cup of cheese, add skillet to oven and cook for 25 minutes or until cheese is melted.
  • Top with cilantro.
  • Serve immediately with tortilla chips for dipping.
