Baked Sweet Potato Fries

These Baked Sweet Potato Fries are a fantastic compliment to just about any meal and an easy way to get kids to eat their veggies!

This week has been a bit of a whirlwind so far. My youngest started acting sick on Sunday and had a fever and sore throat.

I scrambled to find a doctor’s office to take him to Monday morning since I suspected strep throat. No, I have no medical education. However, I seem to be right most of the time when it comes to my children.

Anyway, it was a challenge to get him an appointment before late afternoon because of the number of flu cases going around. 

I finally had him seen and his test came back negative for strep and the flu. It was such a relief that it wasn’t the flu. And not so relieved it wasn’t strep since we treat that with antibiotics.

Fast forward to Tuesday night when I receive a phone call saying his lab test for strep came back positive!

UGH! At least they send in a lab test in addition to the rapid strep test done at the clinic. However, this meant I had to scramble for childcare Wednesday morning since it was one of the days I was scheduled to work.

Thankfully, my parents are willing to watch kiddos when they are sick with contagious illnesses (like all day Tuesday too). And they are willing to come over on a few hours notice! 

Well, this has been my exciting week so far and all with the anticipation and anxiety of us leaving for skiing up north on Thursday morning! So obviously we are all trying to get healthy or stay healthy for our trip!

And now onto the recipe. Personally, I’ve always been a fan of sweet potatoes, whether they are cooked whole or mashed. However, not everyone feels that way.

And since sometimes I want and need variety from my typical roasted vegetable routine, I will quickly slice up sweet potatoes and make them into this easy recipe below since I know the entire family will devour them.

Baked Sweet Potato Fries

Prep Time 15 minutes
Cook Time 25 minutes
Total Time 40 minutes

Ingredients
  

  • 2 medium sweet potatoes sliced into 1/4 inch fries
  • 2 tablespoons olive oil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • black pepper and salt to taste

Instructions
 

  • Preheat oven to 400ºF.
  • Cover a rimmed baking sheet with aluminum foil. Place a metal cooling rack on top of the foil. Spray the cooling rack with non-stick cooking spray.
  • In a bowl add fries and olive oil and stir until fries are well coated.
  • Add seasoning and stir well.
  • Place fries on prepared baking sheet, leaving room in between each fry.
  • Bake for 25-30 minutes or until fries are crispy.
