Avocado Corn Tomato Salad

This Avocado Corn Tomato Salad is a simple, no-lettuce salad made with healthy fats and a lime-cilantro dressing. It makes a great side dish or a light lunch!

This past week was my first official week of working outside the home in over 7 years. Thankfully it went surprisingly well besides my youngest getting sick as well as myself.

But it wouldn’t be normal if someone wasn’t sick in the middle of January, right?! We made it through the week and had a 3 day weekend to recover.

Now don’t worry, I’ll still be blogging in my spare time (aka evenings & early mornings).

And in addition to blogging, my new part-time job and being a full-time wife and mom, I am even more determined on providing and sharing quick and healthy meals.

So that of course is good news for you, my readers!

Now even though I’m a food blogger, I still often scour Pinterest for inspiration and ideas for new recipes to make. Several of my recipes on Chocolate Slopes are also inspired by friends, family and even restaurant food that I loved.

Recently, I purchased a few avocados on sale and thought I’d easily find a salad to make with them.

There are plenty of ideas on Pinterest which is where I found this recipe from Paula Deen, and closely followed for this recipe.

I’m glad I gave this recipe a try since it was definitely delicious and a great way to add some healthy fats to my diet!

Dietitian’s Dish

Avocados often get quite the publicity in terms of its nutritional benefits and for good reason!

A serving is one-third of an avocado and contains only 80 calories and 3 grams of fiber. Avocados also uniquely have healthy fats too including 1 gram of polyunsaturated and 5 grams of monounsaturated fats per serving.

Don’t forget that eating a balanced diet including healthy fats reduces your risk of heart disease and can help lower cholesterol levels.

Avocado Corn Tomato Salad

Prep Time 15 minutes
Total Time 15 minutes

Ingredients
  

  • 1 avocado peeled and sliced
  • 1 cup cherry tomatoes chopped in half
  • 2 cups cooked canned fresh corn
  • 1 cup cucumber chopped

dressing

  • 2 tablespoons olive oil
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon lime juice
  • 1/2 teaspoon lime zest
  • salt and black pepper

Instructions
 

  • Combine all vegetables in a bowl.
  • Combine dressing ingredients in a bowl, stir well.
  • Pour dressing over vegetables.
  • Store in refrigerator.
