When it comes to snacking, kids and adults alike need something satisfying and ideally healthy. (Yes that’s the dietitian speaking).

That’s what I love about hummus + veggies, you not only get a nutritious snack, but you’re also eating something that is so tasty.

So when the kids get home from school and act like they haven’t eaten all day, I break out the hummus and fresh vegetables.

Simple Ingredients to Make This 7 Layer Mexican Hummus Dip

  • Hummus
  • cherry tomatoes 
  • bell peppers
  • black beans 
  • black olives
  • Mexican-blend shredded cheese
  • cilantro
  • Serve with: tortilla chips, pretzels

It makes the perfect snack, or as I like to call it…an unofficial afternoon meal!

My continuous goal of not spending much time in the kitchen is greatly helped by simple, no recipe solutions like this one.

Of course you could call it a recipe since it contains ingredients. However, it only takes 5 minutes to put together and voilà! A meal is served!

I can’t even tell you how often we eat hummus on a weekly basis…every.single.day.

I should seriously buy stock in Sabra hummus.

This past week I decided to branch out a bit and add even more ingredients to the classic Sabra Hummus and veggie combo.

I did this by adding Mexican-inspired ingredients to the top of Sabra’s roasted garlic hummus.

And I can’t tell you how simple it was to add the extra vegetables. And we all enjoyed it so much!

If you have kids you know it’s always thrilling when you, your husband AND your kids enjoy the same meal or snack.

Dietitian’s Dish

This simple no-fuss vegetarian appetizer is a perfect solution to afternoon hunger or even great for summer parties.

It’s not only delicious, but also full of fiber from all the vegetables and black beans which help keep you satisfied.

7-Layer Mexican Hummus Dip

Prep Time 5 minutes
Total Time 5 minutes

Ingredients
  

  • 1 10 ounce container Sabra Roasted Garlic Hummus
  • 1 cup cherry tomatoes chopped
  • 1 pepper red, yellow or orange, chopped
  • 3/4 cup black beans rinsed and drained
  • 1 4 ounce can black olives, sliced
  • 1/2 cup Mexican-blend shredded cheese
  • 2 tablespoons fresh cilantro chopped
  • Serve with: tortilla chips pretzels, carrots or cucumber slices

Instructions
 

  • In a shallow dish, spread hummus evenly throughout bottom of dish.
  • Add remaining ingredients evenly on top of hummus.
  • Refrigerate until ready to serve.
  • Enjoy within two days.
