30 Minute Veggie Tortellini Soup

This 30 Minute Veggie Tortellini Soup is an excellent way to help add vegetables simply to your day while enjoying a hearty lunch or dinner!

I rarely serve soup to my kids, probably for fear of the mess it can make. But since I try to serve my kids a variety of foods I gave this veggie tortellini soup a try and I was pleasantly surprised when they all tried it. If you have young children that are hesitant to try soups ask them to “fish” for the vegetables and tortellini – my kids LOVED doing this! 

30 Minute Veggie Tortellini Soup

A simple yet hearty vegetable soup!

Ingredients
  

  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 2 celery ribs chopped
  • 1 onion chopped
  • 2 cups carrots chopped
  • 2 48 ounce cans low sodium vegetable broth
  • 1 14.5 ounce can low sodium diced tomatoes
  • 2 cups Pero Family Farms® snipped green beans
  • 1 cup frozen sweet corn
  • 1 package dry tortellini
  • 1/4 cup grated Parmesan cheese optional

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add garlic, celery, onion and carrots.
  • Cook for 5-10 minutes or until vegetables are tender.
  • Increase heat to high and add broth, tomatoes, green beans and corn. Once the soup has started to boil, add tortellini.
  • Reduce heat and simmer for 9-10 minutes or until tortellini is cooked.
  • Top with Parmesan cheese if desired.
