Are you someone who enjoys wholesome home cooked meals but would rather not spend hours in the kitchen? I am! Maybe it’s the age of my kids, or the fact that I have so any other interests that I’d rather not spend the few minutes of leisure time I have in the kitchen. Ever notice a trend of my addition of spinach to many recipes? Well, it’s true, I try to sneak it in whenever I can. No, I’m not trying to literally “hide” vegetables from my kids, but I do love adding veggies whenever possible. Spinach especially is easy to add to practically any meals, especially pasta dishes like this tortellini bake. Spinach is also a nutrition powerhouse that’s full of nutrients like vitamin A and K, folate, iron and fiber.
